Optimization of biofunctional jaggery yogurt: It’s physicochemical and antioxidantproperties

In addition to the standard healthy diet needs, balance food is taught be a healthier that will promote human health. It’s also known as functional food, which clearly claims have health advantages well ability enhance immune system. Yoghurt fermented dairy product in great demand for its nutrient content, bacterial activity and wide range terms of flavours textures. this study, physicochemical, microbiological sensory differences probiotic set yoghurt incorporated with different concentration Jaggery were evaluated, changes taking place during storage at 4°C 21 days. During storage, jaggery improved survival Lactobacillus delbrueckii subspecies bulgaricus (ABT-7) Streptococcus thermophiles (YoFlex Express 1.0) from CHR HANSEN, Denmark used starter culture yogurt preparation. All yogurts exhibited decrease pH accompanied by an increase titratable acidity storage. Therefore, study revealed could produce sensorial attributes.
